I received an email today showing me several pieces of search engine optimization software designed to generate traffic automatically
from high traffic sites like YouTube and Craigs List.My question is,What's makes something blackhat as opposed to whitehat or ok?

Blckhat method is mainly is the method in which we try to deceive search engines to look like our site is very popular to get better search engine result pages ranking.

And all those automatic generation methods using youtube and social networks are not black hat seo method unless they use search engine to get traffic.

making search engine fool in short is black hat

In my opinion, gray hat seo is in the middle of white and black hat techniques..

Gray hat SEO technique is safer than black hat. In grey hat you are less likely to get banned from search engines as compared to black hat but you may get some penalties.

No Gray hat is combination of the techniques.Upper layer of white hat and from inside it works as black hat.

Gray Hat Optimization involve the Black Hat techniques which are I think not good in terms of Search engine webmaster policies.

White hat SEO employs only techniques as suggested – or a minimum of, not barred – by search engines. Gray hat SEO is SEO techniques that take more risks than white hat SEO techniques but aren't likely to get your site banned from search engines..
EX.
1. Having a keyword density that's high enough to sound unnatural but not at the level of black hat keyword stuffing
2. Publishing duplicate content at different sites

I don't think there is any thing named gray hat seo method because search engine don't see difference between gray hat and black hat both are same for search engine!

Gray hat is the combination between white hat and black hat SEO.
