I have heard that cloaking is one of the black hat methods. My Question is, what is it? and what other methods that falls under black hat SEO?

yaa Clocking is Black hat techniques in where one set of content is shown to human visitors and another set of content is shown to Search Engine so don't use this techniques it's harm full for your web site

Black Hat techniques:
# Keyword stuffing: Keyword stuffing is the overuse of keywords in a piece of content. Generally, this is repeating the same keywords over and over just to achieve a higher search engine ranking.

# Invisible text: Quite a few cheap sites use this tactic, which involves making keywords to be the same color as the background, so readers can't see the massive amounts of keywords, but search engine spiders can.

# Doorway pages: These are pages that regular visitors cannot see, but search engine spiders can. They are used to trick the search engines so that the site gets a higher ranking. Not only do they go against the rules, but they also hurt the visitor's experience.

Cloaking is the way of show different-different content to visitors and Search Engine it's black hat techniques don't use it!!!
some more black hat techniques like as door way pages, keywords stuffing, hidden text & link, link framing, gate way pages etc...

This is also a unethical way of promotion to get more traffic and visibility of website. In Cloaking the creation of the content for website is different for search engine spider and for users.

i think these are hidden text, mostly these are the keywords that they want to rank, they make it colored as the background color of the the site...

Cloaking generally means to present different version of web page contents from of search engines to search robots and human visitors based on their browser's user agent or IP address. It's a deceptive method used to cheat search engines in order to rank well for desired keywords.

you should avoid cloaking ..

it is a part of black hat methods, and don't ever do it. Work on white hat methods.
